Some ways to prepare Ceviche
The most traditional dish of the diverse and delicious Peruvian cuisine is ceviche. There are many ways to prepare it, but the most simplest and traditional way to do it is fish ceviche. Although in several countries like, Brazil, Panama, Uruguay, Mexico, Colombia, Costa Rica, and other many countries they eat ceviche, the ingredients are very different.
Preparing a Peruvian ceviche is faster than the Mexican ceviche. To begin prepared a Peruvian ceviche; we need to cut the onion very thin. Next, we extract the juice from squeezing lemons, and keep the juice in a bowl. Then cut the croaker fish into squares. Now, we start cutting the chili peppers in half or into slices. Later on, we place the fish in a bowl with salt, pepper, and hot chili peppers. Then we stir everything and leave it for three minutes until the fish is imbued with the flavors. Afterward, we take the lemon juice and the onions and we put them over the fish and mix it. We wait five to seven minutes until the fish is ready. Finally, we added slices of sweet potato, cooked corn and lettuce leaves.
Mexican and Peruvian ceviche are prepared with fish and have the same name,but it is prepared differently. To begin prepared a Mexican ceviche we need cut the mere fish into cubes. Next, we put the fish in a container with lemon juice, water, and salt. We stir from time to time and let the fish cook inside the refrigerator. Wait until the fish changes colors from clear to white. Then, in a large bowl, we mix tomatoes, onion, cilantro, green jalapeno, oregano, lemon juice, salt, and olive oil. We stir and add the fish already cooked. Finally when everything is ready they serve with crackers, ketchup, and avocado.
Even though, the ceviche has similar ingredients in both countries, it is eaten and cooks very differently. But at the end, we enjoy eating the ceviche. This plate is one of my favorite foods. We always eat on summer and winter. Of course every country says that they have the best ceviche, but in my opinion Peruvian ceviche is the best.

Wow the picture look so great. I like fish, it maybe become my new favorite dish. I though you used corn in this recipe too, but after I read your essay I know that not any word " corn " there. But it looks so great !
